Ingredients:
- 2 large black eggplant
- 1 large green pepper
- 5 medium size potatoes
- 1 large can tomato paste
- 3 gloves garlic, crushed
- 250 ml water
- 2 tsp stock
- salt
- pepper
- a lot of olive oil
Cut eggplant, pepper and potatoes into cubes. Fry eggplant, pepper and garlic and cook potatoes. Boil water and mix in stock, add tomato paste, cooked potatoes and fried eggplant, pepper and garlic. Blend the mixture until it's creamy, but leave some whole bits of pepper, eggplant and potatoes. Season with olive oil, salt and pepper and serve hot with Arabic bread.
